Our Team here at The Wine Centre, – Mark, Dante and Pavel – are experts in all things wine, beers & spirits and have a combined experience of over 30 years in the business. They would be more than happy to help with deciding on what to buy, whether it's something for a special occasion, a gift or just a night in front of the telly!


Mark - The Manager


Tell us a little bit about yourself...

I'm a Wexford man, I grew up in Rosslare on the beach. I love the outdoors and building or creating things with my hands. I also grow my own veg at home.

 

How did you come to be in The Wine Centre?

I love customer service and this opportunity came along and with a love for wine & beers I couldn't turn it down. 

 

What is your favourite wine and why?

Chablis in white, Amarone in red - these are both great character wines from two of my favourite places. 

 

What is your favouite wine region/country and why?

I like old world French & Italian as it's the area where I learned about wines whilst I was in Kelly's Hotel in Rosslare. 

 

What's the best tip you've ever been given when it comes to wine/beer/etc?

Try it - you will never know if you like it until you actually try it!

 

What's the strangest thing you've been asked/asked for?

Not really a request but it's funny when people tell me they don't like Chardonnay but love Chablis!

Tell us a little bit about yourself...

I'm hairy (think Hagrid), IBA Certified Mixologist, Level 3 WSET Award and I'm currently studying towards a Diploma in Wines & Spirits.

 

How did you come to be in The Wine Centre?

I made a natural progression from on to off trade.

 

What is your favouite wine and why?

I don't have one! I love the sheer diversity of the wine world - too much good stuff to pick one!

 

What is your favourite wine region/country and why?

Italy. Their wines are full of life & charm. Some easy drinking, some rich and always great value.

 

What's the best tip you've ever been given when it comes to wine/beer/etc?

Follow your palate & break the rules.

 

What's the strangest thing you've been asked/asked for?

Irish wine. Now there are experienced vineyards in the country, but when I first heard the question there were none!

Tell us a little bit about yourself...

I'm from Peru oringinally. I moved to Ireland in 2009 buy my love for wine started long before, First working as a hotel manager in Peru and then as a crew member of The Royal Caribbean Cruise Lines. 

 

How did you come to be in The Wine Centre?

I was very lucky, I had just moved to Kilkenny from Dublin and some one told me that The Wine Centre was looking for a Wine Sales Advisor. I applied , got the job and that was in November 2010.

 

What is your favourite wine and why?

My favourite wine is the well produced one. I just like a good bottle of wine. I don't have any preference for grapes, regions or countries. I like to explore all of them and find the perfect one.

 

What is your favourite wine region/country and why?

My favourite country from a studies point of view would be France. There is a lot to learn and you need to be very knowledgable to talk about it. But I also like how variable Italy and Portugal are as wine producing countries. 

 

What's the best tip you've ever been given when it comes to wine/beer/etc?

The more studies about wine you do, the more you realise that you don't know anything about wine. Wine education is incredibly valuable but also very frustrating for people who want to get a higher wine education. 

 

What's the strangest thing you've been asked/asked for?

Working in a wine environment you always get a lot of customers and of course a lot of questions:

1. Can I have a bottle of Champagne from Italy?

2. Can I have a Cotes du Rhone Cabernet Sauvignon?

3. I bought a 12 year old single malt whiskey 6 years ago, does that mean it is 18?
